Easter Chocolate Chip & M&M Cookies.

I can't get enough of these little bunny cookies. They're simple, fun to make with kids and so darn cute. Every bite is soft, sweet and packed with chocolatey goodness.

To make the bunny faces, simply press whole M&Ms (Easter pastel shades) into the warm cookies for faces and cut a few in half to create the cutest little bunny ears!

They make such a sweet addition to kids' Easter baskets, classroom parties, baby showers, spring brunch dessert tables and Easter Sunday dessert platters.

Ingredients

  • 8 tbsp salted butter, softened

  • ½ cup white sugar

  • ¼ cup brown sugar

  • 1 tsp vanilla extract

  • 1 large egg

  • 1½ cups all-purpose flour

  • ½ tsp baking soda

  • ¼ tsp salt

  • ⅓ cup semi-sweet chocolate chips

  • ⅓ cup Easter M&Ms, plus extra for topping

Instructions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, beat the butter, white sugar and brown sugar together for 1-2 minutes until light and fluffy.

3. Add the vanilla extract and egg and mix until fully combined.

4. In a separate mixing bowl, whisk together the flour, baking soda and salt.

5. Gradually mix the dry ingredients into the wet mixture until a dough forms.

6. Fold in the chocolate chips and Easter M&Ms. Remember to leave some M&Ms for decorating.

7. Use a medium cookie scoop or tablespoon to form cookie dough balls and place them onto the prepared baking sheet.

8. Bake for 9-10 minutes or until the edges are a light golden brown.

9. While still warm, press extra M&Ms into the tops of the cookies to create bunny faces. For the bunny ears, cut M&Ms in half and gently press them into place.

Tip: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Once completely cool, store your in an airtight container at room temperature for up to 5 days (though, let’s be honest, they rarely last that long around here).
