Ingredients

For the Cookies

  • 3½ cups all-purpose flour

  • ¼ teaspoon baking soda

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 1 cup butter, softened

  • 2 ounces cream cheese, softened

  • 1¼ cups sugar

  • 1 teaspoon vanilla extract

  • 1 egg

For the Strawberry Frosting

  • 1 cup unsalted butter, softened

  • 1 teaspoon vanilla extract

  • 6 tablespoons strawberry preserves

  • 4 cups powdered sugar

  • 1 tablespoon milk

  • 1 drop red food coloring (optional)

Instructions

1. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

2. In a large bowl, beat the butter, cream cheese, and sugar until light and fluffy.

3. Add the egg and vanilla extract and beat until fully combined.

4. Gradually mix in the dry ingredients until a thick dough forms.

5. Divide the dough into two portions, flatten into disks, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.

6. Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.

7. Roll the chilled dough on a lightly floured surface to about ⅛-inch thickness. Cut out 48 cookies using a 3-inch rectangle cookie cutter, re-rolling scraps as needed.

8. Place half of the cookies on the baking sheets. Use a 1-inch heart cutter to cut the centers from the remaining rectangles.

Save the heart cutouts to bake separately and make cute mini heart sugar cookies.

9. Bake for 8-10 minutes, or until the edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

10. To make the frosting, beat together the butter, vanilla extract, and strawberry preserves until smooth.

11. Add the powdered sugar, milk, and food coloring (if using), beating until creamy and spreadable.

12. Flip the solid cookies over and spread frosting on the bottom of each one.

13. Top with the heart-cutout cookies to create sandwich cookies.
