Ingredients.
Pumpkin Batter:
1 ¾ cups all-purpose flour
2 tsp pumpkin pie spice
1 tsp baking soda
½ tsp salt
15 oz pumpkin puree
1 cup granulated sugar
½ cup brown sugar
2 large eggs
½ cup vegetable oil
2 tsp vanilla extract
Orange gel food coloring (optional)
Cream Cheese Swirl:
8 oz cream cheese, softened
¼ cup granulated sugar
1 large egg yolk
1 tsp vanilla extract
Instructions.
1. Preheat oven to 375°F (190°C). Line a muffin tin with cupcake liners.
2. In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and a bit of orange food coloring, if desired.
3. In a separate bowl, whisk together the flour, pumpkin pie spice, baking soda and salt.
4. Gently fold the dry ingredients into the pumpkin mixture using a spatula until fully combined.
5. For the cream cheese, in a medium mixing bowl, beat cream cheese and sugar together until smooth.
6. Add in the egg yolk and vanilla extract and mix until well combined.
7. Fill each cupcake liner about ⅔ full with the pumpkin batter.
8. Add 1 tablespoon of the cheesecake mixture to each muffin.
9. Use a toothpick or skewer to swirl the cream cheese mixture and pumpkin batter for a marbled effect.
10. Bake for 18-20 minutes or until a toothpick inserted into the pumpkin part comes out clean.
11. Let muffins cool in the pan for 5-10 minutes before transferring to a wire rack.
12. Enjoy warm or at room temperature.
