These brownies hit the sweet spot between fudge-like richness and a perfectly crisp, shiny top. They’re easy enough for a weeknight bake yet special enough to serve at a dinner party.

Ingredients

  • 200g dark chocolate

  • 175g unsalted butter

  • 325g caster sugar

  • 130g plain flour

  • 3 medium eggs

Instructions

1. Preheat the oven to 170°C (325°F / Gas 3).

2. Line an 8 x 8-inch baking tray with parchment paper.

3. Roughly chop the dark chocolate.

4. In a heatproof bowl set over a pan of simmering water, melt the chocolate and butter together until smooth.

5. Remove from the heat, then stir in the sugar until fully incorporated.

6. Add the flour and mix until smooth.

7. Beat in the eggs until the mixture is thick and glossy.

8. Pour the wet batter into the lined tray and bake for 30-35 minutes. The brownies should be flaky on top but soft in the centre. Avoid overbaking or the edges will turn hard.

9. Leave to cool completely in the tray. Lift out using the parchment paper and cut into 12 squares.

Storage: Keep in an airtight container at room temperature for up to 5 days.
