Chocolate Chip Cake Mix Cookie Bars.

You can easily switch out the chocolate chips for white chocolate chips or butterscotch chips. For a salty-sweet combo, try adding crushed pretzels to the batter.

Stir in chopped nuts for an extra layer of crunch, or drizzle the finished bars with melted peanut butter chips or top with a scoop of vanilla ice cream for a decadent finish.

Ingredients

  • 1 box yellow cake mix (13.25 oz or 15.25 oz)

  • 2 large eggs

  • ½ cup vegetable oil

  • ⅓ cup water

  • ¾ cup milk chocolate chips, plus extra for topping

Instructions

1. Preheat oven to 350°F (175°C). Grease a 9x13 pan with non-stick spray.

2. In a large bowl, mix your box of cake mix, eggs, oil and water until smooth.

3. Fold in ¾ cup chocolate chips using a rubber spatula or wooden spoon.

4. Spread batter evenly into the prepared pan.

5. Top with a few extra chocolate chips.

6. Bake for 24 minutes or until a toothpick inserted in the center comes out just barely gooey.

7. Cool in the pan for 20-30 minutes before slicing.

8. Serve and enjoy!

Store leftovers in an airtight container at room temperature for up to 4 days. To freeze allow them to cool completely before slicing, wrapping in parchment paper and placing in a Ziploc bag. 

Tips & Tricks

  • Using a smaller pan? Lower the oven to 325°F and increase bake time.

  • Avoid adding too many chocolate chips as this will make the bars too gooey and they'll fall apart.

  • Let them rest fully before slicing for clean bars that hold together.

  • These cake mix cookies will be softer than traditional cookies, so be careful not to overbake.
