If you love Italian sub sandwiches but want something a little lighter (and easier to serve at a gathering), this Grinder Chopped Salad is a must-try.
This salad has become my go-to for easy weeknight dinners, summer lunches or anytime I want something quick, easy and delicious without heating up the kitchen.
I’ve even packed it up for road trips and picnics.
Chopped Italian Grinder Salad.
I like to serve this sub sandwich salad whenever I need something easy that everyone will love. It’s great for game days, family dinners, potlucks or no-cook meals!
And because it holds up well, it's also a fantastic make-ahead salad. Just keep the dressing on the side until you're ready to serve.
Ingredients:
6 cups romaine lettuce, chopped
1 cup smoked turkey, chopped
1 cup honey ham, chopped
1 cup dried salami, chopped
1 cup pepperoni, chopped
1 cup provolone cheese, chopped
1 cup grape or cherry tomatoes, quartered
1/3 cup banana peppers, chopped
1/3 cup roasted red peppers, chopped
1 cup creamy Italian dressing (or to taste)
Instructions:
1. Place chopped romaine lettuce in the bottom of a large salad bowl.
2. Layer the turkey, ham, salami, pepperoni, provolone, tomatoes, banana peppers and red peppers over the lettuce.
3. Gently toss all the ingredients together until evenly mixed.
4. Drizzle with creamy Italian dressing right before serving, or serve dressing on the side.
Tips:
Add crunch: Toss in croutons or thinly sliced red onion.
Make it lighter: Substitute a light Italian dressing or use half the amount.
