You know I'm always on the lookout for easy, show-stopping desserts that work for any celebration so I just had to share my latest favourite, strawberry mascarpone mousse. It’s the kind of dessert that looks super fancy but takes way less effort than you’d think.
This easy mousse recipe uses just a handful of simple ingredients. Think mascarpone cream, a little whipped cream, a touch of sugar, and, of course, juicy large strawberries. The result? A creamy mascarpone mousse with an airy texture that melts in your mouth with every spoonful.

Honestly, this is now my go-to strawberry mousse recipe when I want something that’s both light and indulgent.
Ingredients
1 lb fresh or frozen strawberries
1¾ cups mascarpone
⅓ cup heavy cream
3 tablespoons granulated sugar
½ cup powdered sugar
1 tablespoon gelatin + ½ cup cold water
1 teaspoon vanilla extract
Fresh strawberries, for garnish (optional)
White chocolate drops, for garnish (optional)
Instructions
1. Prepare (Bloom) the Gelatin
In a small bowl, sprinkle the gelatin over ½ cup of cold water. Let it sit for about 5 minutes until it becomes sponge-like.
To dissolve, place the bowl with the gelatin in a larger heatproof container filled with hot water. Stir gently until fully melted. Set aside to cool slightly.
2. Cook the Strawberries
In a small saucepan, combine the strawberries and granulated sugar.
Simmer over medium heat for 10-15 minutes, until the strawberries are soft and the mixture thickens slightly.
Remove from heat and let it cool to room temperature.
3. Make the Mascarpone Cream
In a large bowl, beat together the mascarpone, heavy cream, powdered sugar and vanilla extract until smooth and creamy. Set aside.
4. Blend the Strawberries
Once the strawberry mixture has cooled, blend half of it into a smooth purée. Leave the remaining half chunky for texture.
5. Combine Cream & Strawberry
Gently fold the non-blended strawberry purée into the mascarpone cream. Place this mixture in the fridge for about 20 minutes to firm up slightly.
6. Incorporate the Gelatin
Right before assembling, stir the cooled gelatin into the blended strawberry purée.
7. Assemble the Mousse
Spoon the mascarpone-strawberry mixture into individual serving glasses, filling most of the way.
Top each with 3-4 tablespoons of the remaining strawberry purée (with gelatin).
Garnish with fresh strawberries and white chocolate drops if desired.
8. Chill and Serve
Refrigerate the assembled mousse for 2–3 hours until fully set.
Serve chilled and enjoy.
