If there’s one thing I always make when summer rolls around, it’s these adorable strawberry shortcake cups. Whether you're planning a backyard BBQ, packing for a sunny picnic, or hosting a birthday bash, these little cuties are the perfect summer dessert that everyone will go bananas (well, strawberries) for!

They’re the kind of dessert that makes people think you spent hours baking, when really, you whipped them up in 5 minutes flat.

Strawberry Shortcake Pudding Cups.

These sweet little cups are my secret weapon for every kind of get-together. Think backyard barbecues, summer baby showers, graduation parties or even just a Tuesday when you want a little treat.

They’re light, fruity, creamy and oh-so-cute served in individual servings or mason jars (because who doesn’t love their own personal dessert?). And if you want to mix it up, you can totally swap the pound cake for angel food cake for a lighter dessert. Either way, you can’t go wrong.

Ingredients:

• 2 (12 oz.) store-bought pound cakes

• 2 lbs. fresh strawberries

• 8 oz. Cool Whip or Heavy Whipped Cream

Directions:

1. Slice the pound cakes into small cubes.

2. Remove the tops from the strawberries and cut them into quarters.

3. Begin assembling in cups or jars:

• Add a layer of pound cake cubes.

• Pipe or spoon a layer of Cool Whip or whipped heavy cream.

• Add a layer of quartered strawberries.

4. Repeat with a second cake layer.

5. Finish with a final layer of Cool Whip and top with a few strawberry pieces for garnish.
