Ingredients.
For the Salad:
2 cups shredded rotisserie chicken
4 cups chopped iceberg lettuce
½ cup cherry tomatoes, halved
½ cup diced cucumber
¼ cup red onion, thinly sliced
1 ripe avocado, diced
4 slices cooked bacon, chopped
¼ cup crumbled feta cheese
For the Honey Mustard Dressing:
3 tbsp Dijon mustard
2 tbsp honey
3 tbsp olive oil
1 tbsp fresh lemon juice
Salt and freshly ground black pepper, to taste
How to make Chopped Chicken Salad Recipe.
1. Prepare the Salad:
In a large bowl, combine the chopped lettuce, tomatoes, cucumber.
2. Add the red onion, avocado and bacon.
3. Top with shredded chicken and the crumbled feta cheese.
4. Make the Salad Dressing:
In a small bowl or jar, whisk together the Dijon mustard, honey, olive oil, lemon juice, salt, and pepper until the dressing is smooth and well-emulsified.
5. Assemble and Serve:
Drizzle the honey mustard dressing over the salad. Toss gently to combine.

How To Store.
If you haven’t added the dressing yet, the chopped salad will stay fresh in an airtight container in the fridge for up to 3 days.
Once tossed with dressing, it’s best enjoyed within 24 hours. After that, the lettuce starts to wilt and the avocado can brown.
Store the honey mustard dressing separately in a sealed jar in the fridge for up to 1 week. Just give it a good shake before using it again!
