Fall is in full swing and with it comes one of my favorite traditions, baking a homemade apple pie. Is there anything more comforting than the smell of apple pie baking in the oven?
This homemade Honeycrisp apple pie is the ultimate fall comfort dessert with perfectly spiced apples, a touch of honeyed apple sweetness and a flaky, buttery crust that’s truly irresistible.
Whether you’re baking for a holiday gathering or sharing dessert after Sunday dinner, this delicious apple pie recipe is one you’ll come back to year after year. It’s a go-to in our home for Thanksgiving, and honestly, no autumn celebration feels complete without it.
If you've never made pie dough from scratch, don’t worry, it’s easier than you think! Cold butter and ice water are key for creating that tender, flaky crust. Once you try it, you'll wonder why you ever settled for store-bought.
Ingredients
For the Pie Dough:
2 ½ cups all-purpose flour
1 teaspoon sea salt
1 cup unsalted butter, cold and diced
6–8 tablespoons ice-cold water
For the Apple Filling:
6–7 medium Honeycrisp apples, peeled, cored, and thinly sliced
2 tablespoons lemon juice
¾ cup granulated sugar
¼ cup brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon salt
For the Topping:
1 tablespoon unsalted butter, cut into small pieces
1 small egg, beaten
1 tablespoon granulated sugar
Instructions
1. Make the Dough
Mix flour and salt in a bowl. Add cold butter and cut it into the flour until the mixture resembles coarse crumbs.
Slowly add ice water, one tablespoon at a time, mixing until the dough just comes together.
Divide the dough into half, shape each portion into a ball, wrap in plastic wrap and chill for at least 30 minutes.
2. Prepare the Filling
Preheat oven to 400°F (200°C).
In a large bowl toss apple slices with lemon juice in a large bowl.
In a separate bowl, combine the granulated sugar, brown sugar, all-purpose flour, cinnamon, nutmeg, ginger, and salt. Stir this into the apples until evenly coated.
3. Assemble the Pie
Remove the chilled dough from the refrigerator and let it sit at room temperature for a few minutes.
On a lightly floured surface, roll out the dough into a circle large enough to fit into a 9-inch pie dish.
Transfer the rolled-out dough to the pie dish, pressing it gently against the bottom and sides.
Fill with the apple mixture and make a slight mound in the middle.
Dot the filling with small pieces of butter.
Roll out the second ball of dough and place it over the filling. Trim the excess dough and crimp the edges.
Cut small vents into the top crust to allow steam to escape during baking.
Brush with beaten egg wash and sprinkle with sugar.
4. Bake and Cool
Bake for 45–50 minutes until the crust is golden brown and the apple pie filling is bubbling.
Cool on a wire rack for at least 2 hours before slicing.
If you really want to take it up a notch, try serving it warm with a scoop of vanilla ice cream, a dollop of whipped cream or a swirl of cinnamon-spiced yogurt.
