Ingredients
10 Cups Mini Marshmallows
6 Cups Lucky Charms
6 Tablespoons Butter
Nonstick Cooking Spray
Instructions
1. Lightly coat a 9x13-inch baking tray with non-stick cooking spray or greaseproof/parchment paper.
2. Slice your butter into chunks and combine it with 8 cups of mini marshmallows in a large mixing bowl.
3. Microwave for 2 minutes.
Don't have a microwave? Make the butter and marshmallow mixture over the stove top using a heat-proof bowl over a large saucepan of simmering water. Be careful not to let the marshmallows brown and burn.
4. Stir immediately until the melted butter and marshmallows combine.
5. Add the remaining 2 cups of marshmallows and 5 cups of Lucky Charms to the melted marshmallows and gently fold together until the cereal and unmelted marshmallows are fully coated.
6. Add the cereal mixture to your pan and press down gently using a spatula to make an even layer.
Make sure to use a silicone spatula. It will stick less and make it easier to spread out.
7. Sprinkle the remaining Lucky Charms over the top and lightly press down. Any extra marshmallows can also be added.
8. Let them rest for around an hour or until set.
9. Slice into bars and enjoy.
Tips:
Spray your hands or tray with a little nonstick cooking spray before pressing the finished mixture into the pan. This will help it stick less. Another option is to line it with parchment or wax paper.
Be careful not to press the mixture into the pan too hard as this can make your bars tough and chewy (not in a good way).
Store any leftover gooey marshmallow treats in an airtight container at room temperature. Stack the bars and place a piece of parchment paper between each layer so they don't stick. Keep for up to 3 days.
Try pairing these Lucky Charms bars with other festive treats like Pot of Gold Rainbow Cupcakes and shamrock-shaped cookies for a fun and colorful St. Patrick’s Day dessert spread.
