Not only easy to make but also a blast to decorate. Plus, who can resist chocolate cupcakes topped with fluffy green frosting, rainbow belts and tiny pots of gold?

These cupcakes are perfect for baking with kids. Little hands will love helping decorate, especially when it comes to adding the rainbow belts and sprinkling on the gold balls.
You can make your cupcakes from scratch, use a box mix like I did or even use store-bought cupcakes.
Whether you’re baking with kids, planning a classroom treat or hosting a themed party, this recipe will brighten your celebration and your day.
Ingredients
1 box chocolate cupcake mix (plus water, oil, and eggs per box instructions)
1 cup salted butter, softened
2 tsp vanilla extract
4 cups powdered sugar
1-2 tbsp milk (if needed)
Green gel food coloring
12 mini Reese’s peanut butter cups
12 Rainbow Berry Airheads Extremes belts
Gold ball sprinkles
Instructions
Bake the Cupcakes
1. Preheat oven to 350°F (175°C). Line a muffin tin with 12 cupcake liners.
2. In a large bowl, prepare a cupcake batter according to the package instructions.
3. Fill liners 2/3 full with batter.
4. Bake as directed on the box. Let cupcakes cool completely before decorating.
Make the Frosting
1. In a large mixing bowl, beat softened butter for 1-2 minutes until smooth.
2. Mix in vanilla extract.
3. Gradually add powdered sugar, beating well.
4. If the frosting is too thick, mix in 1-2 tbsp milk. If too thin, add more powdered sugar.
5. Reserve 1/4 cup of frosting in a small bowl.
6. Tint the remaining frosting green using gel food coloring and mix until the color is even.
Assemble the Cupcakes
1. Pipe green frosting onto each cupcake using a 1M star tip.
2. For the “pot of gold,” top each peanut butter cup with a dab of the reserved frosting and press gold sprinkles on top until fully coated.
3. Cut each rainbow belt to about 3–4 inches, enough to arc without tipping.
4. Insert a rainbow belt into each cupcake, forming a small rainbow.
5. Place a ‘pot of gold’ at the end of each rainbow.
