Mini Grilled Cheese Appetizers

There’s something undeniably comforting about grilled cheese and tomato soup and these mini grilled cheese bites take that classic combo and turn it into the perfect shareable appetizer.

Crispy on the outside, soft melted cheese in the middle, and brushed with a garlic-herb butter that bakes right into the bread, these mini sandwiches are made for dunking.

Whether you’re serving them as a party appetizer, an easy family dinner, or a fun twist on soup night, they disappear fast.

The best part? They’re baked in the oven, so you can make a whole tray at once, no standing over the stove flipping sandwiches one by one.

Ingredients

  • ¼ cup butter, softened

  • 1 teaspoon garlic powder

  • 1 teaspoon dried parsley

  • 1 package Hawaiian rolls

  • 9 slices American cheese, each slice cut into 6 pieces

Instructions

1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a small bowl, mix together the softened butter, garlic powder, and parsley until well combined.

3. Slice each Hawaiian roll horizontally into three equal pieces, creating mini sandwich layers.

4. Spread the garlic butter mixture on one side of each bread piece.

5. Place half of the bread pieces butter-side down on the prepared baking sheet.

6. Top each piece with one small piece of cheese.

7. Cover with the remaining bread pieces, placing them butter-side up.

8. Bake for 20 minutes, flipping the sandwiches halfway through, until golden brown and the cheese is melted.

Tips & Variations

  • Add a slice of cooked bacon or ham for extra flavor.

  • Swap the American cheese for sharp cheddar cheese, pepper Jack, or mozzarella.

  • Serve with tomato soup or marinara for dipping.
