Ingredients
1 can tuna, drained (5 oz)
3 tbsp mayonnaise
1 tsp Dijon mustard
2 tbsp celery, finely chopped
2 tbsp red onion, finely chopped
3 small kosher dill pickles, finely chopped
Salt and pepper, to taste
4 slices bread
2 slices cheddar cheese
Instructions
1. In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, celery, red onion, and chopped pickles. Season with salt and pepper to taste.
2. Divide the tuna mixture evenly between 2 slices of bread.
3. Top each with a slice of cheddar cheese.
4. Place the remaining two slices of bread on top of the tuna and cheese slices.
5. Place the sandwiches on a baking sheet and broil on low until the cheese is melted and bubbly (about 2-3 minutes).
6. Remove from the oven and cut each sandwich in half.
7. Serve warm, optionally with chips or a simple side salad.
