Ingredients
1 ¼ cups all-purpose flour
1 cup graham cracker crumbs
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
½ cup light brown sugar
⅓ cup granulated sugar
1 egg
1 tsp vanilla extract
12 regular marshmallows, halved
2 Hershey bars, broken into 24 small rectangles
Instructions
1. Preheat oven to 350°F (175°C). Spray a 24-cup mini muffin tin with nonstick spray.
2. In a large bowl, beat butter, brown sugar, and granulated sugar until smooth.
3. Add egg and vanilla. Mix until well combined.
4. In a separate bowl, whisk together flour, graham cracker crumbs, baking soda, and salt.
5. Gradually add to the wet ingredients, mixing just until combined.
6. Divide the dough evenly among the muffin cups. Press down gently.
7. Bake for 8-10 minutes or until lightly golden.
8. Immediately after baking, use the back of a spoon to gently press the centers down, forming a cup shape.
9. Place half a marshmallow (cut side down) into each cookie cup.
10. Set oven to broil or use the grill. Place the muffin tin back in the oven and carefully toast the marshmallows until golden.
Watch closely - it only takes a few seconds!
11. Immediately place a chocolate rectangle on top of each toasted marshmallow.
The heat will cause the chocolate to melt slightly.
