These Apple Butter Thumbprint Cookies are the perfect little bite of fall! Soft, buttery cookies are rolled in a sweet apple pie spice sugar coating, then filled with creamy apple butter for a deliciously cozy treat.

If you love warm fall flavours, these easy thumbprint cookies are definitely one to add to your baking list.

These delicious cookies are perfect for all kinds of fall occasions. Add them to a Thanksgiving dessert table, bring a batch along to a family get-together or cookie exchange or simply enjoy with a cup of coffee.

They’d also make a lovely addition to a fall cookie platter alongside other homemade cookies and sweet treats. And because they’re small and easy to pick up, they work especially well for parties and casual gatherings.

Ingredients

  • ½ cup butter, softened

  • 1 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2½ cups all-purpose flour

  • ½ teaspoon baking soda

  • 2 teaspoons apple pie spice, divided

  • ¼ cup sugar

  • ½ cup apple butter

How To Make Apple Butter Thumbprint Cookies.

1. Preheat your oven to 325°F and line a baking sheet with parchment paper.

2. Add the softened butter and brown sugar to a large mixing bowl. Beat until light and fluffy.

3. Add the eggs and vanilla extract and continue beating until everything is smooth and well combined.

4. Add the flour, baking soda and 1 teaspoon of the apple pie spice. Mix until a soft cookie dough forms.

5. In a small bowl, stir together the remaining 1 teaspoon of apple pie spice and the sugar.

6. Use a tablespoon or small cookie scoop to portion out the dough.

7. Roll each piece between your hands to form a ball, then roll it in the apple pie spice sugar mixture.

8. Place the cookie dough balls onto your prepared baking sheet, leaving at least an inch between each one.

9. Use the back of a teaspoon to gently press a small well into the centre of each cookie.

10. Fill each well with about 1 teaspoon of apple butter.

Try not to overfill them, as you want the apple butter to stay neatly in the centre while the cookies bake.

11. Bake for 12-15 minutes, or until the cookies are lightly browned around the edges.

12. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
