Apple Butter Snickerdoodle Cookies

If you love classic snickerdoodles, you’re going to want to add these apple butter cookies to your fall baking list. They’re easy to make, use simple ingredients and are perfect for sharing at parties, bake sales, Thanksgiving gatherings or cosy nights at home.

These apple butter snickerdoodles are the perfect fall cookie! They’re soft, chewy, warmly spiced and packed with delicious apple butter flavour.

Each cookie is rolled in a sweet apple pie spice and sugar mixture before baking, giving them a lightly crisp, sparkly coating while keeping the centres soft and chewy.

Ingredients

  • 1/2 cup apple butter

  • 1/4 cup butter, softened

  • 1 1/2 cups sugar, divided

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 3/4 cups all-purpose flour

  • 1 tablespoon plus 1 teaspoon apple pie spice, divided

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cream of tartar

Instructions

1. Beat together the apple butter, softened butter and 1 cup of sugar until light and fluffy.

2. Add the egg and vanilla extract and beat until combined.

3. Add the flour, 1 teaspoon apple pie spice, baking soda and cream of tartar. Beat until mixed.

4. Cover the dough and refrigerate for at least 2 hours.

5. When ready to bake, preheat the oven to 375°F and line a baking sheet with parchment paper.

6. Combine the remaining 1/2 cup sugar and 1 tablespoon apple pie spice in a small bowl.

7. Use a tablespoon or small cookie scoop to scoop out the dough.

8. Roll each dough ball in the sugar mixture and place on the prepared baking sheet at least 1 inch apart.

9. Bake for 13–15 minutes, until the bottoms are golden brown but the centres are still soft.

10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
