BBQ Chicken Ranch Sliders

I am absolutely obsessed with these BBQ Chicken & Bacon Ranch Sliders. I've made a lot of slider recipes over the years, but this one has become my absolute go-to, and I don't see that changing anytime soon.

There's something about that combination of sweet, smoky BBQ chicken piled onto a soft Hawaiian roll with crispy bacon and melty Colby Jack cheese that is impossible to resist.

Crowd-Pleasing Party Appetizer.

What I love most about these sliders is just how easy they are to pull together. Twenty minutes, one pan, and a handful of simple ingredients is all it takes to have something that looks and tastes like you put in way more effort than you actually did.

Every time I bring these to a party, they're the first thing to disappear off the table, and I always get asked for the recipe.

If you're looking for something that's quick, crowd-pleasing, and absolutely packed with flavour, these sliders are it. I promise you won't be disappointed.

Ingredients

  • 1.5 lb boneless, skinless chicken breasts

  • 2 cups barbecue sauce (divided)

  • 1 (12-pack) Hawaiian rolls

  • 1/4 cup mayonnaise

  • 6 slices Colby Jack cheese

  • 8 slices cooked bacon

  • 1/2 red onion, sliced

  • 2 cups shredded lettuce

  • 1/4 cup ranch dressing

  • 1 tbsp oil (for cooking)

Instructions.

1. Cut the chicken breasts in half to make 4 smaller pieces. Place them in a large zip-top bag and add 1 1/2 cups of barbecue sauce. Seal and shake until fully coated.

2. Heat oil in a large skillet over medium heat. Add the chicken and cook for 5–7 minutes per side, until fully cooked with slightly charred edges.

3. Remove, then chop or shred the chicken and set aside.

4. Slice the Hawaiian rolls in half horizontally. Place the bottom halves on a tray and set the tops aside.
5. Spread mayonnaise evenly over the bottom buns.

6. Add shredded chicken evenly over the buns.

7. Drizzle the remaining 1/2 cup barbecue sauce on top.

8. Layer with cheese slices and bacon.

9. Next, add the onion and lettuce.

10. Drizzle ranch dressing over the lettuce.

11. Place the top buns on, slice into individual sliders, and serve.

Tips & Tricks

  • Store leftovers in an airtight container in the fridge for 2-3 days

  • If prepping ahead, add ranch just before serving to keep lettuce crisp
