Ingredients
6 cups mixed greens (arugula, spinach, baby lettuce)
1 cup cherry tomatoes, red
1 cup mozzarella balls (bocconcini)
½ cup cucumber slices
¼ cup pitted black olives
¼ cup pomegranate seeds
2 tbsp fresh basil leaves
2 tbsp olive oil
1 tbsp balsamic glaze
Salt and freshly ground black pepper, to taste
Instructions
1. Arrange the mixed greens in a circular shape on a large, round platter to form the base of the wreath.
Place a small bowl in the middle to create the hole.
2. Tuck cucumber slices, cherry tomatos and olives evenly around the greens for added texture and support.
3. Add the mozzarella balls and pomegranate seeds evenly over the greens.
4. Add fresh basil leaves for an extra pop of green and aroma.
5. Drizzle with olive oil and balsamic glaze.
6. To finish, season with salt and black pepper and serve immediately.
