Easy Rocky Road
This classic Rocky Road recipe is packed with dark chocolate, marshmallows, and crunchy digestive biscuits. Perfect for parties, gifting, or a quick sweet treat.

When it comes to easy, crowd-pleasing treats, Rocky Road never fails. It’s rich, indulgent, and packed with all the good stuff: chocolate, marshmallows, and crunchy biscuits.
It's a perfect recipe for kids to help with, fun to whip up for parties, or simply a delicious way to satisfy that sweet craving.

The great thing about this recipe is that you can add or replace anything you like.
This version sticks to the classic combo of dark chocolate, digestive biscuits, and marshmallows, but feel free to get creative.
Don't like digestive biscuits? Try replacing them with amaretti biscuits and pistachios
If dark chocolate isn't your thing, you could go for a white chocolate Rocky Road with coconut and ginger biscuits.
Ingredients
300g dark chocolate (at least 70% cocoa solids)
250g unsalted butter
3 tbsp golden syrup
200g digestive biscuits
250g marshmallows (keep a handful aside for decorating)
Instructions.
1. Line or grease a baking tin and set it aside.
2. In a heatproof bowl over a saucepan of simmering water, gently melt the chocolate, butter, and golden syrup together.
3. Stir until smooth, ensuring the bottom of the bowl doesn’t touch the water.
4. While the chocolate melts, break the digestive biscuits into chunky pieces.
Don’t crush them too small; the chunkiness adds texture.
5. Remove the melted chocolate from the heat.
6. Add the biscuit pieces and most of the marshmallows (remember to keep a handful for the topping).
7. Stir until everything is evenly coated.
8. Pour the mixture into your prepared tin and spread it out evenly.
9. Sprinkle the remaining marshmallows over the top and press them in gently.
I like to use normal size marshmallows (no mini marshmallows here) as it helps with the chunky appearance.
10. Place the tin in the fridge and let it set for at least 2 hours or until firm.
11. Once firm, cut into squares or bars and serve!
