Summer desserts don't get much easier than these colourful Fruit Pizza Cookies! Made with soft sugar cookies, a sweet cream cheese frosting, and topped with fresh fruit, they're the perfect treat for parties, BBQs, picnics, and holiday celebrations.

The creamy frosting pairs perfectly with the soft sugar cookie base, while the fresh strawberries, kiwi, blueberries, and mandarins add a burst of fruity flavour in every bite.

Best of all, they're incredibly simple to make thanks to refrigerated sugar cookie dough, making them perfect for last-minute parties or when you need an easy dessert that still looks impressive.

Ingredients

  • 1 (16.5 oz.) roll sugar cookie dough

  • 8 ounces cream cheese, softened

  • 3 tablespoons unsalted butter, softened

  • 1 1/4 cups powdered sugar

  • 1 teaspoon vanilla extract

  • 2 kiwi, peeled and sliced

  • 1 cup strawberries, chopped

  • 1/2 cup blueberries

  • 1/2 cup mandarins (canned or fresh)

Instructions.

1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. Bake the sugar cookies according to the package directions.

3. Allow the cookies to cool completely.

4. In a large mixing bowl, beat together the cream cheese and butter until smooth.

5. Add the powdered sugar and vanilla extract. Mix until well combined and creamy.

6. Spread or pipe the frosting onto the cooled cookies.

7. Top each cookie with chopped strawberries, sliced kiwi, blueberries, and mandarins.
