Rainbow Veggie Rice Paper Rolls

They’re a crunchy, colorful, customizable treat perfect for kids, parties or any time you want to add a pop of color to your plate.

These vibrant rolls are packed with fresh veggies, wrapped in delicate rice paper, and served with a creamy, flavor-packed hoisin and peanut dipping sauce.

Healthy Vegetable Rice Paper Rolls.

These rainbow veggie rolls are kid-approved. Little ones love getting hands-on and building their own with their favorite veggies.

They're also perfect for parties: bite-sized, mess-free, and easy to hold, making them ideal finger food.

Serve them as a vibrant centerpiece with a variety of dipping sauces like a hoisin-peanut sauce or sweet chili or sriracha-lime.

Ingredients

  • 12 Rice Paper Wrappers

  • 1 medium Carrot, julienned

  • 1 medium Cucumber, julienned (seeds removed)

  • 1 Red Bell Pepper, julienned

  • 1 Green Bell Pepper, julienned

  • 1 Avocado, thinly sliced

  • 1 medium Golden Beet, peeled and julienned (or substitute with red beet)

  • 1 cup Fresh Spinach or Mixed Greens

Instructions.

1. Fill a large shallow bowl or dish with warm water.

2. Submerge one rice paper wrapper for 10–15 seconds, until just pliable (don’t over-soak).

3. Lay the softened wrapper on a damp surface. Layer spinach/mixed greens in the center, followed by the julienned veggies and avocado.

4. Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly like a burrito.

5. Continue with the remaining wrappers and filling ingredients.

6. Cut in half and arrange on a platter.

Tip: Use a damp surface like a wet cutting board or towel when assembling rolls to prevent sticking.
