Slow Cooker BBQ Pulled Pork Sandwiches

Low and slow pulled pork that practically shreds itself, a simple dry rub, a splash of apple cider vinegar, and your slow cooker does the rest.

Pile it high on a toasted bun with creamy coleslaw and extra sauce, and watch it disappear.

This is the kind of recipe you'll come back to again and again. Easy, reliable, and endlessly crowd-pleasing, it works just as well for a casual family dinner as it does for feeding a houseful of friends.

And the best part? The pork only gets better with time. Make it ahead, keep it in the fridge for up to 3-4 days, or stash it in the freezer for whenever you need it.

Just reheat with a splash of BBQ sauce and it's good as new.

Ingredients

  • 1.5 pounds pork shoulder (bone-in or boneless, trimmed)

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 tablespoon paprika

  • ½ teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ cup apple cider vinegar

  • ½ cups BBQ sauce (plus extra for serving)

  • 4-6 sandwich buns or crusty rolls

  • 1 cup coleslaw (optional, for topping)

Instructions:

1. Mix salt, pepper, paprika, garlic powder, onion powder, and brown sugar (if using) to make the dry rub.

2. Rub all over the pork. Refrigerate 4-24 hours if possible.

3. Place the pork in the slow cooker.

4. Add 1/2 cup apple cider vinegar and 1/2 cup BBQ sauce.

5. Cook on low 8-10 hours (high 4-6 hours).

6. Remove pork and shred with two forks. Add extra BBQ sauce if desired.

7. Toast or warm buns.

8. Pile on shredded pork.

9. Top with coleslaw and more BBQ sauce and serve.
