Easy Turkey Pinwheel Roll Ups

These turkey roll ups are hands-down one of my favorite go-to recipes whether I'm prepping for a party, packing school lunches or just need a quick bite. They're creamy, cheesy, full of flavor and totally customizable.
They're a lifesaver when it comes to planning ahead. I love making a batch on Sunday, storing them in an airtight container, and having them ready to grab throughout the week.
Turkey & Cheese Pinwheels.
Made with soft flour tortillas, deli turkey, melty cheddar cheese, and a zesty cream cheese spread, these little pinwheels are a guaranteed crowd-pleaser. They work just as well on a game day snack board as they do tucked into a weekday lunchbox.
And let’s talk about that spread for a second, it’s the real MVP here. A mix of cream cheese, sun-dried tomatoes and a few dashes of Tabasco creates a creamy, tangy, slightly spicy blend that brings all the other ingredients to life.
Ingredients
Sun-Dried Tomato Spread
2 oz cream cheese, at room temperature
2 tbsp sun-dried tomatoes in oil, drained and chopped
2 tbsp mayonnaise
4–5 dashes Tabasco sauce
Kosher salt, to taste
Ground black pepper, to taste
Turkey Pinwheels
2 (9-inch) tortilla wraps
150–200 g sliced turkey breast
4–6 leaves Boston or butter lettuce
6 slices cheese (cheddar, provolone, Monterey Jack)
Instructions
1. Prepare the Sun-Dried Tomato Spread
In a small bowl, mix together the softened cream cheese, sun-dried tomatoes, mayonnaise and Tabasco sauce until smooth and well combined. Season with salt and black pepper to taste.
2. Assemble the Pinwheels
Lay the tortillas flat on a clean surface. Evenly spread the cream cheese mixture across the entire surface of each tortilla.
3. Layer the Fillings
Arrange 3 cheese slices down the middle of each tortilla, leaving a small border on one edge to allow for easier rolling. Next, add 3-5 turkey slices. Enough to cover the whole tortilla. Finally, add the lettuce on top of the turkey in a line down the center.
4. Roll and Chill
Starting from the edge of the tortilla opposite the uncovered border, roll each one tightly into a log. Place them seam-side down in a baking dish or wrap them in plastic wrap. Refrigerate until firm and ready to slice.
5. Slice and Serve
Using a sharp knife, slice each rolled tortilla into 1-inch rounds to make 6-7 pinwheels per tortilla. Insert a toothpick in each piece for easier serving, if desired.
Tips & Notes
When making pinwheel sandwiches, be sure to roll them up tightly. This helps them hold their shape when sliced into rounds.
Want to switch things up? Try swapping the deli turkey for ham, salami, or roast beef, and experiment with different cheeses and flavored spreads like herb or garlic cream cheese.
Short on time? No problem! You can skip the homemade spread and use store-bought sun-dried tomato pesto for a quick and tasty shortcut.
Want a dipping sauce? Simply double the sun-dried tomato spread and serve half on the side.
