What Is a Poke Cake?
A poke cake is exactly what it sounds like. You bake a cake, poke holes all over it, and then pour a liquid filling (like gelatin or pudding) over the top so it seeps down into the holes.
Once chilled, the filling sets inside the cake, creating colourful patterns and extra moisture in every bite.
For this version, we’re using five colors of gelatin to create a beautiful rainbow effect.
Ingredients
1 box Funfetti cake mix
2 tablespoons each red, green, yellow, blue, and purple gelatin (Jello)
1 1/4 cups boiling water
1 1/4 cups cold water
8 ounces frozen whipped topping, thawed

Instructions
1. Prepare and bake the Funfetti cake in a 9x13-inch baking dish according to the package instructions. Allow it to cool completely.
2. Using a wooden skewer, poke holes evenly all over the cake.
3. Place each color of gelatin into separate bowls.
Add 1/4 cup boiling water to each bowl and stir until fully dissolved.
Stir in 1/4 cup of cold water into each bowl and mix well.
4. Carefully spoon or use a syringe to pour each color into different holes in the cake, alternating colors to create a bright rainbow pattern.
5. Refrigerate the cake for at least 4 hours to allow the gelatin to fully set.
6. Spread the thawed whipped topping evenly over the cake and finish with rainbow sprinkles. Slice and serve chilled.
